Chocolate covered from fruit to nuts
Marich Pancrafted Chocolates, founded in 1984 by Marinus Van Dam, a Dutch immigrant, and now run by his sons, makes panned chocolates. Panning is a different process from enrobing, which is basically dip and dry. Instead prepared inclusions and liquid chocolate are poured into constantly rotating drums to coat the inclusions evenly and give them a nice shine.
Marich uses Guittard couvertures, another long-time family owned local chocolate business. They also source their other ingredients as locally as possible.
They make a wide variety of covered chocolates: Nuts, caramels, fruits, pretzels, malt balls, mint cream, shortbread, toffee, and more. There are lots of chocolate options too: dark, milk, white, and sugar free.
Marich doesn’t have a factory store or offer tours anymore. You can buy their full line on their website. And you can find their panned chocolates at many local businesses like Berkeley Bowl, Peet’s Coffee, and Michael’s Chocolates. They also make panned chocolates for other businesses, so check the label — you might already be enjoying their chocolates.
