Ashby Confections, established in 2004, makes truffles, caramels, and chocolate “snacks.” While they used to use a European Grand Cru couverture for their chocolates now they use chocolate from SFBA veteran chocolate maker Guittard and hyper-local White Label chocolate by bean-to-bar maker Mutari Craft Chocolate in Santa Cruz.
Ashby also uses locally sourced, fresh, organic fruits, herbs, and spices, and no preservatives. They have a shop in Scotts Valley and online.
If you like chocolate turtles, Ashby makes some the size of your palm and calls them “tortoises.”
