Their shop in <a href=\"https:\/\/chocolatebythebay.com\/magazine\/listingssfba\/claudio-coralloalegio-chocolate\/\">Palo Alto<\/a> is still open.<\/p>\n<h2>Pure chocolate<\/h2>\n<p><a title=\"Chocolate attraction\" href=\"https:\/\/chocolatebythebay.com\/magazine\/d-i-y-tours\/chocolate-icons\/\" target=\"_blank\" rel=\"noopener noreferrer\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-4441\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2014\/03\/72Nonlocal.png\" alt=\"Chocolate attraction\" width=\"72\" height=\"68\" \/><\/a><strong><a title=\"Alegio Chocolate\" href=\"https:\/\/www.alegio.com\" target=\"_blank\" rel=\"noopener noreferrer\">Alegio Chocolat\u00e9<\/a>,\u00a0<\/strong>which was founded in 2006,\u00a0has their own line of truffles, but what\u2019s more unique about them is the chocolate they carry by Claudio Corallo, for whom they are his only US distributor.<\/p>\n<p>Claudio Corallo is a tree-to-bar maker who maintains more control than anybody we\u2019ve ever heard of \u00a0before over the entire process starting from growing the cacao trees on his own plantation\u00a0on a small island off the coast of west Africa. He even grows most of his flavoring ingredients, such as coffee beans, alcohol and oranges, then processes his chocolate slowly, but minimally.<\/p>\n<p>The results are worth the effort, including a 100% chocolate (0% sugar) bar that isn\u2019t bitter as you would expect, but more savory.<\/p>\n<p>Alegio offers regular chocolate-tasting \u201ctours\u201d of Claudio Corallo chocolate. If you\u2019re into chocolate beyond just enjoying it, they are fun and very educational about a unique chocolatier.<\/p>\n<p>If you&#8217;re more interested in filled chocolates, Alegio\u2019s line of truffles is very good and has some interesting flavors like ginger and orange, grapefruit, and honey, which we liked best.
