I even buy local caramels on occasion \u2014 <strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/socola-chocolatier-barista\/\">Socola Chocolatier<\/a><\/strong> <a href=\"https:\/\/chocolatebythebay.com\/magazine\/recommended\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1257\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2010\/11\/cupicon1.png\" alt=\"3-5 cup chocolatier\" width=\"20\" height=\"20\" \/><\/a>\u00a0and <strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/company-confections\/\">Company Confections<\/a><\/strong> make especially good ones. So when I saw caramels from SFBA <strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/craftsman-and-wolves\/\">Craftsman and Wolves<\/a><\/strong> at <a href=\"https:\/\/chocolatebythebay.com\/magazine\/listingssfba\/berkeley-bowl\/\">Berkeley Bowl<\/a>, I decided to give them a try. There were 3 flavors and they were&#8230; unusual.<\/p>\n<p>Craftsman and Wolves is an SF bakery\/patisserie known for their unusual offerings \u2014 a soft boiled egg encased in a muffin is the showstopper \u2014 and they also make some confections like these caramels. The ingredients lists are upscale \u2014 not very long, all real food ingredients, somewhat esoteric (trimoline? what\u2019s that?), and quality brands (Valrhona chocolate, yes!). Eminently giftable.<\/p>\n<p>The resealable packages each contained 8 large caramels. How big? I took to twisting and pulling these approximately 2&#8243; caramels into smaller pieces to try. They really are too big for one or two bites \u2014 unless you\u2019re making mukbang videos or something, then have at it.<\/p>\n<h2>Smoked Butter<\/h2>\n<p>The most mainstream flavor of the 3 was the Smoked Butter \u2014 but it was a unique experience in itself.<\/p>\n<figure id=\"attachment_41552\" aria-describedby=\"caption-attachment-41552\" style=\"width: 420px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41552\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Smoked-Butter-Caramels.jpg\" alt=\"Smoked Butter Caramels\" width=\"420\" height=\"466\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Smoked-Butter-Caramels.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Smoked-Butter-Caramels-320x355.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Smoked-Butter-Caramels-400x444.jpg 400w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-41552\" class=\"wp-caption-text\">Smoked Butter Caramels<\/figcaption><\/figure>\n<p>The caramel smelled like vanilla and tasted strongly of vanilla instead of butter as you might expect from the name. Also the smooth, chewy caramel was not smoky tasting \u2014 and I know it\u2019s possible because I\u2019ve had <a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/ourchocolatiers\/experiments-in-chocolate\/#mojo\">candies with smoke flavoring<\/a> before. Overall it wasn\u2019t buttery tasting enough for me.<\/p>\n<p>Instead it tasted like a Sugar Daddy \u2014 remember those? Hard caramel lollipops wrapped in wax paper. For the older crowd these could be a fun nostalgia inducing treat. Definitely higher grade \u2014 Sugar Daddies don\u2019t have any butter in them but they do include palm oil and artificial flavors. Craftsman and Wolves\u2019 Smoked Butter Caramels on the other hand only contain 3 types of sugar, cream, smoked butter, a little salt, and vanilla bean.<\/p>\n<p>Just know that while these are well made caramels, they should probably be renamed or the recipe tweaked. Vanilla was the strongest flavor, underneath that the caramel was more of a milky caramel than a buttery one. And any smokiness has drifted away.<\/p>\n<h2>Yuzu Almond<\/h2>\n<p>The other 2 caramels seemed to be Asian inspired like a lot of Craftsman and Wolves pastries which include ingredients like Buddha\u2019s hand, lychee, Vietnamese coffee, papaya, and oolong tea.<\/p>\n<figure id=\"attachment_41556\" aria-describedby=\"caption-attachment-41556\" style=\"width: 420px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41556\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Yuzu-Almond-Caramel.jpg\" alt=\"Yuzu Almond Caramel\" width=\"420\" height=\"114\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Yuzu-Almond-Caramel.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Yuzu-Almond-Caramel-320x87.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Yuzu-Almond-Caramel-400x109.jpg 400w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-41556\" class=\"wp-caption-text\">Yuzu Almond Caramel<\/figcaption><\/figure>\n<p>As the name implies the Yuzu Almond included yuzu juice and almonds \u2014 plus lemon juice, Valrhona white chocolate, and cocoa butter along with the traditional sugar and butter.<\/p>\n<p>These caramels were a pretty, very light yellow color with visible sliced almonds. They smelled lightly citrusy and had an immediate yuzu flavor \u2014 but the white chocolate underneath turned it into a lemon icing taste.<\/p>\n<p>These were the farthest away from a traditional caramel experience of the bunch. Unusual flavors in caramels are nothing new but in addition to the flavor these didn\u2019t have a real caramel texture. They were not chewy \u2014 they dissolved quickly instead except for the crunchy almonds \u2014 and they had a slightly sugary texture.<\/p>\n<p>They were not buttery at all and very sweet. Too sweet for me, these caramels are maybe a new candy type \u2014 or at least one I haven\u2019t had before \u2014 like somewhere between a ganache and a caramel. If you want a different caramel experience \u2014 and like sweets \u2014 these are interesting.<\/p>\n<h2>Chocolate Shoyu<\/h2>\n<p>On the opposite end of the sweetness scale was the 3rd caramel from Craftsman and Wolves, the Chocolate Shoyu Caramel. Shoyu is Japanese style soy sauce which is sweeter than Chinese soy sauce \u2014 but it\u2019s still a savory ingredient.<\/p>\n<p>The other ingredients were 80% Valrhona dark chocolate, cream, butter, and 3 types of sugar. The dark chocolate and shoyu made the caramels an attractive dark brown color.<\/p>\n<figure id=\"attachment_41558\" aria-describedby=\"caption-attachment-41558\" style=\"width: 850px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41558\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Chocolate-Shoyu-Caramels.jpg\" alt=\"Chocolate Shoyu Caramels\" width=\"850\" height=\"407\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Chocolate-Shoyu-Caramels.jpg 850w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Chocolate-Shoyu-Caramels-320x153.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Chocolate-Shoyu-Caramels-640x306.jpg 640w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Chocolate-Shoyu-Caramels-768x368.jpg 768w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2024\/02\/Chocolate-Shoyu-Caramels-400x192.jpg 400w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><figcaption id=\"caption-attachment-41558\" class=\"wp-caption-text\">Chocolate Shoyu Caramels<\/figcaption><\/figure>\n<p>I think the shoyu also gave the caramels a very soft texture \u2014 when I pinched a piece to sample it stretched a looong way before breaking off.<\/p>\n<p>The texture was syrupy not chewy and tasted like a savory chocolate with coffee overtones. It wasn\u2019t as salty as I thought it might be with shoyu as a highlighted ingredient.<\/p>\n<p>Knowing it was flavored with soy sauce I thought I could taste it a little but if I didn\u2019t know what flavor it was supposed to be I would have said coffee and something savory\/umami. Like the other Craftsman and Wolves caramels this was not a buttery caramel.
