And I surprised myself with how many of the entries I rated 4 or 5 stars had no chocolate in them. I\u2019m not much of a candy person if there is no chocolate involved, but I do appreciate a fine caramel now.<\/p>\n<p>As with all of my recent articles about judging, I am limiting myself to talking about entries that I rated 3 stars or higher. I will keep it on the positive side with caramels I can recommend \u2014 wherever they come from, and whether chocolate is included or not.<\/p>\n<h2>Strong start<\/h2>\n<p>I first encountered\u00a0<a href=\"https:\/\/www.kwokacaramel.com\" target=\"_blank\" rel=\"noopener\"><strong>Kwoka Caramel<\/strong><\/a>, Bergen, NJ, last year when they submitted 2 unusual caramels: A\u00a0Pistachio Sea Salt Caramel that was\u00a0so full of nuts it smelled of pistachio and had an immediate pistachio flavor; and a Licorice Caramel that smelled like licorice and had a mild but distinct licorice flavor. They were both chewy soft, not too sweet, buttery caramels that I loved.<\/p>\n<figure id=\"attachment_27797\" aria-describedby=\"caption-attachment-27797\" style=\"width: 320px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27797\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Kwoka-caramels.jpg\" alt=\"Kwoka caramels\" width=\"320\" height=\"284\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Kwoka-caramels.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Kwoka-caramels-200x178.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-27797\" class=\"wp-caption-text\">Not fancy, just delicious<\/figcaption><\/figure>\n<p>This year, they submitted more traditional flavors : A Sea Salt Caramel and a Mocha Caramel. They were a similar experience to last year\u2019s submissions, if less adventurous.<\/p>\n<p>Kwoka\u2019s caramels are traditionally made firm but soft, slightly sticky caramel cut into wide rectangles and\u00a0wrapped in clear wrappers. They are not\u00a0chocolate coated, but I still recommend them highly.<\/p>\n<p>The Mocha Caramel was\u00a02 sided, one dark and one a medium colored caramel. It had an enticing coffee aroma and an immediate coffee flavor that lasted throughout the experience. It was smooth and chewy, with a buttery\/coffee tasting combo as it melted.<\/p>\n<p>Really delicious, I rated it a\u00a05. It received\u00a0Silver for Best Taste, Best Packaging, and Top Caramels; and Honorable Mentions for Best Exterior Design and Best Ingredient Combinations. It rated 4.5 stars.<\/p>\n<p>Kwoka\u2019s other entry, Sea Salt Caramel, was also excellent. It had a good strong caramel aroma with an immediate buttery taste, then a little salt. Like the Mocha Caramel it was smooth, chewy, and delicious. And it became more buttery and caramel tasting as it melted.<\/p>\n<p>Another 5 in my book. It received Silver for Best Taste and an Honorable Mention for Top Caramels; and rated 4.5 stars.<\/p>\n<p>You can <a href=\"https:\/\/www.kwokacaramel.com\" target=\"_blank\" rel=\"noopener\">purchase Kwoka caramels online<\/a> \u2014 check their New Arrivals page for their unique flavors.<\/p>\n<h2>Range of flavor moods<\/h2>\n<p><strong>Sweet Jules,<\/strong>\u00a0Minnetonka, MN, was another straight-up caramel maker I first encountered at last year\u2019s competition and loved. Last year, they submitted 3 pieces which I would categorize as plain (Fleur de Sel), a little flair (Jules of Paris \u2014 a chocolatey caramel), and out there (Farm Apple Spice, bursting with apple and molasses flavors). They were all well made traditional chewy caramels and delicious.<\/p>\n<figure id=\"attachment_27798\" aria-describedby=\"caption-attachment-27798\" style=\"width: 320px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27798\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Jules-caramels.jpg\" alt=\"Sweet Jules caramels\" width=\"320\" height=\"253\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Jules-caramels.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Jules-caramels-200x158.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-27798\" class=\"wp-caption-text\">Mild to wild caramels<\/figcaption><\/figure>\n<p>They did a similar range this year with\u00a0vanilla (the plain), espresso (a little flair), and an interpretation of a classic Southern dessert (out there). Again, I loved them all and rated them all 5s.<\/p>\n<p>The Classic Vanilla Bean caramel smelled so good, with a sweet caramelized butter smell. It was a soft, smooth caramel with an excellent traditional buttery caramel flavor. It received\u00a0Silver for Best Taste and an Honorable Mention for Top Caramels; and rated 4.5 stars.<\/p>\n<p>The Cafe Italiano caramel added espresso to the vanilla caramel ingredients to give it a light coffee aroma. The espresso flavor was not bitter, and made for a less sweet and\u00a0very enjoyable experience. \u00a0It received\u00a0Honorable Mentions for Best Exterior Design, Best Taste, Best Packaging, and Most Unique. It rated 4.5 stars.<\/p>\n<p>Their \u201cout there\u201d entry was a Bananas Foster caramel. Again it started from the vanilla caramel\u00a0but added banana liqueur. It was great too with an immediate banana flavor plus a little boozy note for fun. It received\u00a0Silver for Best Taste; Bronze for Top Caramels; and Honorable Mentions for Best Ingredient Combinations and Most Unique. It rated 4 stars.<\/p>\n<p>You can buy Sweet Jules caramels online or at their pastry shop in Minnetonka.<\/p>\n<h2>Nutty about nuts<\/h2>\n<p>Another strong caramel-no-chocolate contender both last year and this year was\u00a0<strong>Sweet Nouveau Artisan Confections,\u00a0<\/strong>Chicago, IL. If you like chewy caramels with nuts, these are for you \u2014 both entrants this year features large visible pieces of nuts with good nuts flavors.<\/p>\n<figure id=\"attachment_27800\" aria-describedby=\"caption-attachment-27800\" style=\"width: 320px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27800\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Nouveau-caramels.jpg\" alt=\"Sweet Nouveau caramels\" width=\"320\" height=\"420\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Nouveau-caramels.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Nouveau-caramels-305x400.jpg 305w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Sweet-Nouveau-caramels-200x263.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-27800\" class=\"wp-caption-text\">Somebody who understands the correct proportion of nuts to caramel<\/figcaption><\/figure>\n<p>Their Bourbon Maple Pecan caramel, which they also submitted last year, featured pecan halves in their traditional firm, chewy caramel. And they don\u2019t skimp on the rest of the named ingredients: I could smell the maple and bourbon before I tasted them.<\/p>\n<p>This was a not too sweet caramel with a good balance of bourbon maple pecan and buttery caramel flavors with a dash of salt. It had a\u00a0soft pecan crunch throughout, and the flavors lingered. I rated it\u00a05 stars. It received\u00a0Gold for Best Taste and Top Caramels; Silver for Best Ingredient Combinations. It was rated 4.5 stars.<\/p>\n<p>The Smoked Honey Walnut caramel had good sized walnut pieces, a strong hit of salt and a good caramel flavor, but the honey made it too sweet for me. \u00a0I still liked the\u00a0flavor and rated it\u00a03 stars. It received\u00a0Silver for Best Taste; and Bronze for Best Ingredient Combinations and Top Caramels. It was rated 4 stars.<\/p>\n<p>Sweet Nouveau Artisan Confections caramels and chocolate treats are available online and at various events around Chicago. Check their website for more information.<\/p>\n<h2>Old fashioned caramel<\/h2>\n<p>The last naked caramel entries I thought above average were from\u00a0<strong><a href=\"https:\/\/www.grandpafrankscandy.com\" target=\"_blank\" rel=\"noopener\">Grandpa Frank\u2019s Candy<\/a>,\u00a0<\/strong>Wheaton, IL. These little caramel squares were slightly sticky, and as the name implies, they were a taste of nostalgia. Not just traditional, they evoked memories of department store caramels.<\/p>\n<figure id=\"attachment_27801\" aria-describedby=\"caption-attachment-27801\" style=\"width: 200px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27801\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Grandpa-Franks-Pecan-caramel.jpg\" alt=\"Grandpa Franks Pecan caramel\" width=\"200\" height=\"180\" \/><figcaption id=\"caption-attachment-27801\" class=\"wp-caption-text\">Grandpa Frank\u2019s \u00a0mild Pecan Caramel<\/figcaption><\/figure>\n<p>I liked their 2 nutty entries best: Pecan Caramel and Bourbon Pecan Caramel. They were smooth, buttery, and soft with a little texture from the soft nuts.<\/p>\n<p>The Pecan Caramel had visible bits of pecans, but were not extremely nutty. It started more buttery and got nuttier as it melted. I rated it\u00a04 stars. It received\u00a0Bronze for Best Taste, and rated 4 stars.<\/p>\n<p>The Bourbon Pecan Caramel had a boozy, sweet, distinct bourbon flavor that lingered. The pecans were\u00a0too understated; more a noticeable texture than a flavor.<\/p>\n<figure id=\"attachment_27802\" aria-describedby=\"caption-attachment-27802\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27802\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/Grandpa-Franks-Coffee-Bean.jpg\" alt=\"Grandpa Franks Coffee Bean\" width=\"200\" height=\"189\" \/><figcaption id=\"caption-attachment-27802\" class=\"wp-caption-text\">Real coffee bean adds a cute, but hard, touch<\/figcaption><\/figure>\n<p>I prefer the bigger pieces like Sweet Nouveau uses. Still I rated it 3 stars. It received\u00a0Bronze for Best Taste and an Honorable Mention for Best Ingredient Combinations; and rated 4 stars.<\/p>\n<p>Their third entry, Coffee Caramel, was cute\u00a0with a whole coffee bean perched on top. It was a darker caramel with a strong coffee aroma. It was a good caramel with good\u00a0coffee taste but the bean was a hard distraction. Cute, but it would be a better experience without it. I rated it\u00a03 stars. It received\u00a0Honorable Mention\u00a0for Best Taste, and rated 3.5 stars.<\/p>\n<p>Grandpa Frank\u2019s caramels are <a href=\"https:\/\/www.grandpafrankscandy.com\" target=\"_blank\" rel=\"noopener\">available online<\/a>.<\/p>\n<h2 id=\"brigadeiro\">And now for something completely different<\/h2>\n<figure id=\"attachment_27805\" aria-describedby=\"caption-attachment-27805\" style=\"width: 200px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27805\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Brigadeiro-Sprinkles.jpg\" alt=\"Brigadeiro Sprinkles\" width=\"200\" height=\"202\" \/><figcaption id=\"caption-attachment-27805\" class=\"wp-caption-text\">Coronavirus model or candy?<\/figcaption><\/figure>\n<p>New competitor and our first SFBA entrant,\u00a0<strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/brigadeiro-sprinkles\/\" rel=\"noopener\">Brigadeiro Sprinkles<\/a>,\u00a0<\/strong>San Francisco, submitted their unusual looking\u00a0Fleur de Sel Caramel brigadeiro. Brigadeiros are a Brazilian confection, traditionally made with condensed milk and cocoa powder, and rolled in chocolate sprinkles. For this one, Brigadeiro Sprinkles substituted caramel for the cocoa and caramel coated crispy rice pearls for the sprinkles.<\/p>\n<p>The result was something that looked like a blonde coronavirus model and tasted kinda like Dulce de Leche. The round rice crisps taste very milky, and they were attached to a thin sugary shell surrounding soft smooth light colored caramel. The condensed milk taste was noticeable, and the whole piece was very sweet \u2014 but I have noticed those 2 aspects of brigadeiros every time I have tried them.<\/p>\n<p>I liked, not loved, the Fleur de Sel Caramel brigadeiro. It was too sweet for that, but I did like it and rated it\u00a03 stars. It received\u00a0Silver for Best Exterior Design; Bronze for Best Packaging; and an Honorable Mention for Most Unique. It was rated 3.5 stars.<\/p>\n<p>Brigadeiro Sprinkles has an <a href=\"https:\/\/www.brigadeirosprinkles.com\" target=\"_blank\" rel=\"noopener\">online store<\/a> where you can buy pre-made collections or request specific flavors.<\/p>\n<p>Now on to the chocolate portion of our review:<\/p>\n<h2>Tea &amp; chocolate<\/h2>\n<figure id=\"attachment_27799\" aria-describedby=\"caption-attachment-27799\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27799\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/11\/London-Fog-caramel.jpg\" alt=\"London Fog caramel\" width=\"200\" height=\"180\" \/><figcaption id=\"caption-attachment-27799\" class=\"wp-caption-text\">London Fog caramel<\/figcaption><\/figure>\n<p>The entry by new competitor,\u00a0<strong>Urge Chocolates,<\/strong>\u00a0British Colombia, was the first chocolate covered entry I tried this year, and it was another winner. Their\u00a0London Fog Caramels were dark chocolate squares sprinkled with sea salt. Inside was a solid caramel infused with\u00a0Earl Grey tea.<\/p>\n<p>They did it right: Nice light Earl Grey flavor, and not too salty. Just little hits of salt amid a reasonable amount of citrusy Earl Grey in a\u00a0firm chewy caramel, wrapped in good chocolate. Another 5 from me, it received\u00a0Bronze for Best Ingredient Combinations, Best Taste, and Most Unique; and rated 4 stars.<\/p>\n<p>Urge Chocolates has an online shop where you can buy their caramels, truffles, chocolate bars, and other treats.<\/p>\n<h2>Star turns<\/h2>\n<p>Veteran competitor,\u00a0<strong><a href=\"https:\/\/www.chocolatekc.com\" target=\"_blank\" rel=\"noopener\">Panache Chocolatier<\/a>,\u00a0<\/strong>Leawood, KS, surprised me this time with 2 less sweet entries. (\u201cToo sweet\u201d is my usual complaint about their otherwise excellent chocolates.) I was impressed with both.<\/p>\n<figure id=\"attachment_27807\" aria-describedby=\"caption-attachment-27807\" style=\"width: 200px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27807\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Panache-Marnier-Mule.jpg\" alt=\"Panache Marnier Mule\" width=\"200\" height=\"196\" \/><figcaption id=\"caption-attachment-27807\" class=\"wp-caption-text\">Panache\u2019s Marnier Mule<\/figcaption><\/figure>\n<p>The Marnier Mule caramel was a square of dark chocolate with a light colored semi-firm caramel inside. It was described as\u00a0buttery caramel soaked in Grand Marnier, flavored with grated ginger, coated with dark chocolate, and topped with grated lime and orange peel.<\/p>\n<p>It smells chocolatey and had a\u00a0slightly sugary grainy texture.\u00a0Chocolate was the first flavor, slightly citrus, then ginger came in and was the dominant note. But it was more of a ginger snaps flavor \u2014 dominant but not aggressive. It didn\u2019t taste\u00a0boozy at all. If not for the description, I wouldn\u2019t have known it had alcohol in it.<\/p>\n<p>I rated it\u00a04 stars. It received\u00a0Silver for Best Ingredient Combinations and Most Unique; \u00a0and an Honorable Mention for Best Taste. It rated 4 stars.<\/p>\n<figure id=\"attachment_27808\" aria-describedby=\"caption-attachment-27808\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27808\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Panache-spiced-pecan.jpg\" alt=\"Panache spiced pecan\" width=\"200\" height=\"197\" \/><figcaption id=\"caption-attachment-27808\" class=\"wp-caption-text\">Panache\u2019s Spiced Pecan<\/figcaption><\/figure>\n<p>Panache\u2019s Spiced Pecan Caramel was even better. First, it was an attractive chocolate covered disc with lines of chocolate dragged across half the disc, then that half was topped with spices and pecan bits.<\/p>\n<p>Described as a combination of buttery caramel and spicy pecans, it was a semi-firm caramel full of pecans and some orange tinges from spices. It had the same slightly grainy texture as the Marnier Mule with\u00a0good pecan and chocolate flavors, then a little heat, which continued to build but didn\u2019t dominate. I could still taste the pecans. And at the end, the chocolate pecan flavor lingered along with a pinch of heat.<\/p>\n<p>I rated it\u00a05 stars. It received\u00a0Silver for Best Exterior Design and Best Taste; and Bronze for Best Ingredient Combinations. It rated 4 stars.<\/p>\n<p>Panache Chocolatier\u2019s website is still under construction, so you have to call or visit them in person if you want to order something.<\/p>\n<h2>Curvey caramel squares<\/h2>\n<p>Another veteran competitor,\u00a0<strong><a href=\"https:\/\/phillipashleychocolates.com\" target=\"_blank\" rel=\"noopener\">Phillip Ashley Chocolates<\/a>,\u00a0<\/strong>Memphis, TN, submitted a 3-piece set of his\u00a0Luxury Gemstone Caramels. Made with his signature twisted and sloped cube molds and hand painted, these liquid caramel filled dark chocolates were very pretty and ultimately tasty. But they were missing a menu, so I was a little disappointed because I couldn\u2019t always tell what I was experiencing.<\/p>\n<figure id=\"attachment_27810\" aria-describedby=\"caption-attachment-27810\" style=\"width: 200px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27810\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Phillip-Ashley-Bananas-Foster.jpg\" alt=\"Phillip Ashley Bananas Foster\" width=\"200\" height=\"189\" \/><figcaption id=\"caption-attachment-27810\" class=\"wp-caption-text\">Phillip Ashley\u2019s Bananas Foster<\/figcaption><\/figure>\n<p>My fav of the 3 was a Bananas Foster piece, as far as I could tell. It tasted of banana and booze, but it also had another fruity taste that I couldn\u2019t identify so it wasn\u2019t a simple piece but very enjoyable. It was very chocolatey and not too sweet, which impressed me since the dessert is usually very sweet.<\/p>\n<p>The other 2 pieces were fruity and buttery, and one was definitely apple with an initial smoky hit \u2014 maybe from smoked sea salt?<\/p>\n<p>I rated the set 4\u00a0stars. It received Gold for Best Exterior Design and Best Packaging; Bronze for Best Taste; and Honorable Mentions for Best Ingredient Combinations and Top Caramels. It rated 4.5 stars.<\/p>\n<p>Phillip Ashley Chocolates are available <a href=\"https:\/\/phillipashleychocolates.com\" target=\"_blank\" rel=\"noopener\">online<\/a>, at special events, or by appointment at his kitchen in Memphis.<\/p>\n<h2>Cloud caramels<\/h2>\n<p>Veteran competitor,\u00a0<strong>Banyan Tree Chocolate,\u00a0<\/strong>Sarasota, FL, submitted 2 beautiful chocolate caramels, as usual, but used an unusual term \u2014 at least to me \u2014 in describing them.<\/p>\n<figure id=\"attachment_27812\" aria-describedby=\"caption-attachment-27812\" style=\"width: 420px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27812\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/St-Augustine-Bourbon-Caramel.jpg\" alt=\"St Augustine Bourbon Caramel\" width=\"420\" height=\"374\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/St-Augustine-Bourbon-Caramel.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/St-Augustine-Bourbon-Caramel-320x285.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/St-Augustine-Bourbon-Caramel-348x310.jpg 348w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/St-Augustine-Bourbon-Caramel-200x178.jpg 200w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-27812\" class=\"wp-caption-text\">St. Augustine Bourbon Caramel mentions cloud caramel, but the ingredients list suggests otherwise<\/figcaption><\/figure>\n<p>Both the St. Augustine Bourbon Caramel and the Raspberry-Scotch Cloud Caramel used the term cloud caramel in their name\/description. All I could find when googling that made sense to me was Starbucks cloud caramel drinks that used powered egg whites to make the drinks foamy. I rated it\u00a05 stars. It received\u00a0Gold for Best Taste; Silver for Best Ingredient Combinations; Bronze for Top Caramels; and Honorable Mention for Best Exterior Design. It was described as raspberry caramel infused with 10 year old single malt scotch in a dark shell.<\/p>\n<p>It was distinctive, but not a flavor I love. The raspberry faded and left the smoky chocolate taste. Maybe Scotch lovers will appreciate it more. I didn\u2019t hate it and rated it\u00a03 stars. It received\u00a0Bronze for Best Exterior Design and Best Taste; and an Honorable Mention for Most Unique. I liked their square bars that were liberally covered with big pieces of nuts on both the toffee and chocolate sides.<\/p>\n<p>Their Caramel Crunch chocolate bar was a more understated affair with\u00a0small crunchy toffee bits and liquid caramel covered in milk chocolate. The outside gave no clue to the inside; it was a square of milk chocolate embossed with their logo and subtly colored with gold luster dust.<\/p>\n<p>The filled bar was good but a little too sweet for me. Still I rated it\u00a04 stars. When I described the piece as a bronze metallic dome, Cacaopod called it a <em>cabochon,<\/em> which is a jewelry term for convex rounded gemstones. It was buttery and not particularly sweet. It seemed almost savory with an overtone flavor that I couldn\u2019t place.<\/p>\n<p>I found out after judging that it was their Milk Chocolate Salted Caramel Bon Bon. I guess the savory overtone was the salt because the piece didn\u2019t taste salty to me; the salt just intensified the buttery side and toned down the sweet.<\/p>\n<p>I thought that overall it was a very good bonbon and rated it\u00a04 stars. It received Bronze for Best Exterior Design and Best Taste. Rated 4.5 stars.<\/p>\n<p>Marble &amp; Steel Craft Chocolates\u00a0are <a href=\"https:\/\/marbleandsteelcraftchocolates.com\" target=\"_blank\" rel=\"noopener\">available online<\/a>.<\/p>\n<h2>Dark caramels<\/h2>\n<p>SFBA chocolatier and first time entrant,\u00a0<strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/sonoma-chocolatiers-2020\/\">Sonoma Chocolatiers<\/a>,<\/strong>\u00a0Sebastopol, submitted 3 entries. The selection they chose for the competition showed their range \u2014 from crowd pleasers to the esoteric. The chocolates were well made, and all contained\u00a0semi-firm caramel that was not buttery tasting. Instead, it seems like the flavor infusions were more important.<\/p>\n<figure id=\"attachment_27835\" aria-describedby=\"caption-attachment-27835\" style=\"width: 200px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27835\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Sonoma-Chocolatiers-Salty-Dark-Caramel.jpg\" alt=\"Sonoma Chocolatiers Salty Dark Caramel\" width=\"200\" height=\"208\" \/><figcaption id=\"caption-attachment-27835\" class=\"wp-caption-text\">The nibs take it to the next level<\/figcaption><\/figure>\n<p>My fav in the collection was the Salty Dark Chocolate caramel. It was a dark colored, smooth caramel. The shell was topped with nibs, which were a nice crunchy addition \u2014 I\u2019m surprised more people don\u2019t add nibs to their salted caramels.<\/p>\n<p>The piece had the\u00a0right amount of salt: A hit at first that slowly faded into the\u00a0rich tasting chocolate which lingered.<\/p>\n<p>I also liked the Hot Buttered Rum a lot. It smelled of rum, and the taste had apple overtones. It was a good chocolate and rum combo. There was\u00a0a little heat that started slow then faded. It never got very hot; and there was a little numbing sensation afterwards, which was interesting.<\/p>\n<p>The Honey Mint Sesame was an interesting piece: a\u00a0Toblerone-like triangle with the ridge covered in sesame seeds. It smelled like mint and honey, and was a\u00a0very minty, good chocolate, with the sesame coming at end when crunching the seeds. It had a\u00a0lingering chocolate mint flavor.<\/p>\n<p>The Black Forest was a tasty cherry chocolate with a tart cherry flavor. The\u00a0Bourbon Pecan was cool looking with the \u201cbroken\u201d top exposing big pieces of pecan. But the balance was off: Even with the visible nuts, it was too strongly bourbon with an\u00a0immediate alcohol sting and not enough pecan flavor.<\/p>\n<p>The only piece in the selection I disliked was the\u00a0Honey Saffron. It had a savory metallic smell and was so bitter and ugh I had to spit it out. This is definitely one for adventurous souls or if you really like saffron. I disliked it on a chemical level.<\/p>\n<figure id=\"attachment_27822\" aria-describedby=\"caption-attachment-27822\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27822\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Sonoma-Chocolatiers-Salted-Caramel.jpg\" alt=\"Sonoma Chocolatiers Salted Caramel\" width=\"200\" height=\"207\" \/><figcaption id=\"caption-attachment-27822\" class=\"wp-caption-text\">Sonoma Chocolatiers Salted Caramel<\/figcaption><\/figure>\n<p>Overall I rated the collection 3 stars. It received\u00a0Gold for Most Unique; Silver for Best Exterior Design; and Honorable Mentions for Best Ingredient Combinations and Best Taste. It was rated 4 stars.<\/p>\n<p>Sonoma Chocolatiers also submitted a more traditional Salted Caramel (no nibs). It was a firm caramel square dipped in dark chocolate with sprinkling of sea salt on top.<\/p>\n<p>It was good: smooth and not too sweet with an initial hit of salt that faded while the chocolate and buttery caramel come forward. Interestingly the salt returned, and all 3 tastes lingered. I rated it\u00a03 stars. The Dulce de Leche seemed to add a sweet taste, but not really caramel. I liked it though, and rated it\u00a04 stars. It received\u00a0Bronze for Best Exterior Design and Best Taste; and Honorable Mentions for Best Ingredient Combinations and Most Unique. I could\u00a0smell the spices, maybe because the shells\u00a0were not as thick as usual with Delysia bonbons. (Good job!)<\/p>\n<p>While the piece was too sweet for me, I liked that it really tasted like Dulce de Leche, with the pleasant addition of cinnamon and heat at end. I rated it\u00a04 stars. It received\u00a0Silver for Best Taste; and Honorable Mentions for Best Exterior Design, Best Ingredient Combinations, and Best Packaging. The yellow caramel inside gave an initial taste of lemon, then the white chocolate took over. A very mild lager appeared later with the lemon again. The lemon taste lingered. It was too sweet but not bad tasting, and I rated it\u00a03 stars. I didn\u2019t\u00a0taste lager or caramel really. It was more a milk chocolate overload, with a possible hint of savory hops\u00a0at the end. I rated it\u00a03 stars. It received\u00a0Gold for Most Unique, and was rated 3.5 stars.<\/p>\n<p>I didn\u2019t much care for the dark chocolate Eden Apple Blossom Honey Caramel. It was kind of cool looking with a light colored caramel filling inside a milk chocolate shell inside a dark chocolate shell. But it was too sweet, and tasted like milk chocolate instead of dark or honey. I rated it\u00a02 stars, but it did better in the competition. It received\u00a0Honorable Mention for Most Unique, and was rated 3.5 stars.<\/p>\n<p>Seleu\u0161s Chocolates are not currently available online, and their stores are closed due to COVID. <a href=\"http:\/\/www.seleusschocolates.com\" target=\"_blank\" rel=\"noopener noreferrer\">Check their website<\/a> for updates.<\/p>\n<h2>Not your plain vanilla<\/h2>\n<figure id=\"attachment_27818\" aria-describedby=\"caption-attachment-27818\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-27818\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2021\/12\/Petrova-caramel.jpg\" alt=\"Petrova caramel\" width=\"200\" height=\"215\" \/><figcaption id=\"caption-attachment-27818\" class=\"wp-caption-text\">Tonka bean caramel<\/figcaption><\/figure>\n<p>New competitor,\u00a0<strong><a href=\"https:\/\/www.petrovachocolates.com\" target=\"_blank\" rel=\"noopener\">Petrova Chocolates<\/a>,<\/strong> Boston, MA, submitted one unlabeled entry. It was a pretty cabochon\u00a0of milk chocolate with dark speckles, with a transfer of their logo on the bottom. The piece was well made with a\u00a0thin shell encasing the liquid caramel.<\/p>\n<p>The caramel smelled a little like apple and coconut; and the taste had apple overtones. I found out later it was a\u00a0Tonka Bean Caramel. Since tonka bean is similar to vanilla bean, I don\u2019t know where the apple and coconut came from, but it was a nice piece.<\/p>\n<p>I rated it 3 stars. It received\u00a0Bronze for Best Taste and Most Unique; and was rated 3.5 stars.<\/p>\n<p>Petrova Chocolates\u00a0are <a href=\"https:\/\/www.petrovachocolates.com\" target=\"_blank\" rel=\"noopener\">available online<\/a>.<\/p>\n<h2>The real winners<\/h2>\n<p>As always, my picks don\u2019t line up 100% with what the full judges panel thought. But overall I thought this was a strong competition with a lot of good entries from both new and veteran competitors.
