It\u2019s always interesting, and this year was no different, with a repeating theme of messy chocolate, and one bar I hope to never meet again.<\/p>\n<h2>Bull in a china shop<\/h2>\n<p>The first bar I tasted for the competition started the messy theme. <strong>Baetz Chocolates\u2019<\/strong> Return of the Bison bar had a rather wild, messy look to it with a heavy application of blue brush strokes and white splashes on the bar. There was also a little purple luster, molded chocolate bison roaming loosely over the top of the bar in the package.<\/p>\n<figure id=\"attachment_17469\" aria-describedby=\"caption-attachment-17469\" style=\"width: 640px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17469\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Bison-bar.jpg\" alt=\"Baetz Bison bar\" width=\"640\" height=\"319\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Bison-bar.jpg 640w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Bison-bar-320x160.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Bison-bar-348x173.jpg 348w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Bison-bar-200x100.jpg 200w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 984px) 61vw, (max-width: 1362px) 45vw, 600px\" \/><figcaption id=\"caption-attachment-17469\" class=\"wp-caption-text\">Baetz Chocolates\u2019 Return of the Bison bar, AKA Call of the Wild<\/figcaption><\/figure>\n<p>The package said it was a 64% chocolate<span class=\"Apple-converted-space\">\u00a0with c<\/span>acao nibs, dried wild blueberries, and dried black currants. And the back of the bar was liberally sprinkled with all 3. That was all fine and something to look forward to, but that blue coloring on the front came off on my hands every time I handled the bar. I don\u2019t know why because usually I have to hold chocolate in my hands a little while before I risk colors or chocolate residue getting on me. This bar however was like it was shedding color.<\/p>\n<figure id=\"attachment_17468\" aria-describedby=\"caption-attachment-17468\" style=\"width: 420px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17468\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/baetz-bar-back.jpg\" alt=\"Baetz Bison bar back\" width=\"420\" height=\"209\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/baetz-bar-back.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/baetz-bar-back-320x159.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/baetz-bar-back-348x173.jpg 348w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/baetz-bar-back-200x100.jpg 200w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-17468\" class=\"wp-caption-text\">Bison\u2019s back looked delish<\/figcaption><\/figure>\n<p>I liked the crunchy, fruity additives on the bar, but didn\u2019t like the chocolate itself. It was unusually bitter for a 64%. Turns out it\u2019s even in the name, \u201cExtra bitter Guayaquil chocolate.\u201d Talk about truth in advertising. I\u2019m not sure why they chose an extra bitter chocolate to pair with tart fruits. The bison on top was a milk chocolate, which was maybe supposed to be the thing to take the edge off the bitter\/tart big bar, but it wasn\u2019t enough. It was a\u00a0half cylinder bar with a sparkly luster dusted dark chocolate shell. And it was in a beautiful wooden box with the chocolatier\u2019s name embossed on the sliding top. Cacaopod immediately called dibs on the box.<\/p>\n<figure id=\"attachment_17471\" aria-describedby=\"caption-attachment-17471\" style=\"width: 320px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17471\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Etherial-bar.jpg\" alt=\"Baetz Etherial bar\" width=\"320\" height=\"161\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Etherial-bar.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Baetz-Etherial-bar-200x101.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-17471\" class=\"wp-caption-text\">Baetz\u2019s glittery Etherial Bar unboxed<\/figcaption><\/figure>\n<p>The bar itself was filled with a white ganache that was purple hued due to its wild salal berry, honey, and vanilla inclusion. I\u2019m not sure if it had the same dark chocolate as the Return of the Bison bar, but the shell was bitter. And I don\u2019t know what salal berries taste like, so I can\u2019t say if this bar tasted like them. I\u2019d say the bar was chocolaty tasting but it didn\u2019t have a strong berry flavor.<\/p>\n<p>Baetz\u00a0Chocolates\u2019 Ethereal Bar\u00a0received Bronze for Best Texture, Most Unique, and\u00a0Best Bar Design &amp; Art (non packaging); and an Honorable Mention for Best Dark Chocolate Bar; and rated 3.5 stars.<\/p>\n<p>Baetz\u00a0Chocolates is based in\u00a0Edmonton, Alberta, Canada. Or visit them next time you are in Edmonton.<\/p>\n<figure id=\"attachment_17480\" aria-describedby=\"caption-attachment-17480\" style=\"width: 200px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17480\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-Smoke-Chocolate-Bar.jpg\" alt=\"Panache Smoke Chocolate Bar\" width=\"200\" height=\"613\" \/><figcaption id=\"caption-attachment-17480\" class=\"wp-caption-text\">Puff of smoke rising on bar<\/figcaption><\/figure>\n<p>The next competitor, competition veteran, <strong><a href=\"https:\/\/www.chocolatekc.com\" target=\"_blank\" rel=\"noopener noreferrer\">Panache Chocolatier<\/a>,<\/strong>\u00a0from Kansas City, MO, had 2 entries also, and one of them was messy too.<\/p>\n<h2>Smokin\u2019<\/h2>\n<p>Panache\u2019s Smoked Chocolate<span class=\"Apple-converted-space\">\u00a0bar revisited a theme in their <a href=\"https:\/\/chocolatebythebay.com\/magazine\/outsidechocolate\/bright-chocolate\/\">2020 White Chocolate entry: Smoked White Chocolate<\/a>. They tweaked it for this entry by adding a dark chocolate shell and increasing the smoke taste, so much so that the f<\/span>irst flavor was strongly smoky vs. the smoked white chocolate bonbon in the other competition that was fruity first, with a hint of smoke at the end.<\/p>\n<p>The bar was attractive\u00a0with a white chocolate smudge on top of the\u00a0dark chocolate like a wisp of smoke. Breaking off a piece revealed the light brown colored smoked white chocolate interior. For a mostly dark chocolate bar, it was surprisingly soft and sweet.<\/p>\n<p>Panache Chocolatier\u2019s Smoked Chocolate\u00a0Bar\u00a0received Honorable Mentions for Best Dark Chocolate Bar and\u00a0Best Flavored Chocolate Bar; and rated 3.5 stars.<\/p>\n<h2>Messy chic<\/h2>\n<p>Panache\u2019s other entry, the Columbian Gold Bar, was very pretty with edible gold leaf splashed over the staggered honeycomb mold on the front of the dark chocolate bar.<\/p>\n<p>The back side was dusted with brute cocoa powder, giving it a reddish tinge but also making for a seriously messy experience. There was no way to handle this bar without needing to wash my hands afterwards.<\/p>\n<figure id=\"attachment_17479\" aria-describedby=\"caption-attachment-17479\" style=\"width: 420px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17479\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-Columbian-bar.jpg\" alt=\"Panache Columbian bar\" width=\"420\" height=\"308\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-Columbian-bar.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-Columbian-bar-320x235.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-Columbian-bar-348x255.jpg 348w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-Columbian-bar-200x147.jpg 200w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-17479\" class=\"wp-caption-text\">Panache Columbian Gold bar was a beautiful mess<\/figcaption><\/figure>\n<p>The loose cocoa powder had 2 plusses though: #1 It gave the bar a stronger chocolate smell; and #2 It gave an immediate hit of chocolate flavor when I put it in my mouth because it didn\u2019t need to melt first to be tasted.<\/p>\n<p>The bar also broke messy due to the irregular mold design and its soft ganache filling. If you like to strictly ration your chocolate intake by breaking regular squares off a bar, forget it with this one.<\/p>\n<p>In spite of the mess, this was one of my favorite bars in the competition.<\/p>\n<figure id=\"attachment_17478\" aria-describedby=\"caption-attachment-17478\" style=\"width: 320px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17478\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-bar-back.jpg\" alt=\"Panache bar back\" width=\"320\" height=\"293\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-bar-back.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Panache-bar-back-200x183.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-17478\" class=\"wp-caption-text\">Columbian Gold bar\u2019 red-hued cocoa-dusted back<\/figcaption><\/figure>\n<p>The thin layer of dark Columbian chocolate ganache in the dark chocolate couverture\u00a0shell had a very chocolatey flavor with nutty and coconut overtones, and it wasn\u2019t bitter. The initial hit of chocolate from the cocoa powder just added to the overall chocolatey-ness of the whole experience, and the gold leaf was a nice lux touch.<\/p>\n<p>Panache Chocolatier\u2019s Columbian Gold Bar\u00a0received Gold in the competition for Most Unique and\u00a0Best Bar Design &amp; Art (non packaging); Silver for Best Taste, Best Dark Chocolate Bar, and Best Chocolate Bar; and Bronze for\u00a0Best Flavored Chocolate Bar; and rated 4.5 stars.<\/p>\n<p>Panache Chocolatier\u2019s website is currently under construction, and they ask that you call or visit their shop. Check their website for details.<\/p>\n<h2>Clean &amp; neat<\/h2>\n<figure id=\"attachment_17486\" aria-describedby=\"caption-attachment-17486\" style=\"width: 320px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17486\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-bar-cross-section.jpg\" alt=\"Michaels bar cross section\" width=\"320\" height=\"153\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-bar-cross-section.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-bar-cross-section-200x96.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-17486\" class=\"wp-caption-text\">Bourbon Caramel Pecan Barre\u2019s\u00a0cross section<\/figcaption><\/figure>\n<p>The next 2 entries were from SFBA chocolatier, <strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/michaels-chocolates\/\">Michael\u2019s Chocolates<\/a><a href=\"https:\/\/chocolatebythebay.com\/magazine\/recommended\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1259\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2010\/11\/cupicon2.png\" alt=\"3-5 cup chocolatier\" width=\"14\" height=\"16\" \/><\/a>.<\/strong>\u00a0The Bourbon Caramel Pecan Barre was similarly shaped as Baetz\u2019s Ethereal Bar, but it had a more subtle one-color luster on a very shiny bar. The dark chocolate bar was layered inside with pecan ganache layer topped with semi liquid bourbon caramel.<\/p>\n<p>It was totally yummy with light bourbon and pecan flavors melding with caramel and dark chocolate. Michael is very good at balancing flavors so you taste them individually and blended together too. I recommend this bar.<\/p>\n<p>Michael\u2019s Chocolates\u2019 Bourbon Caramel Pecan Barre received Gold in the competition for\u00a0Best Ingredient Combinations, Best Taste, Best Texture, Best Flavored Chocolate Bar and Best Chocolate Bar; and an Honorable Mention for Best Bar Design &amp; Art (non packaging);\u00a0and rated 4.5 stars.<\/p>\n<figure id=\"attachment_17487\" aria-describedby=\"caption-attachment-17487\" style=\"width: 420px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-17487 size-full\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-hazelnut-bar-back-1.jpg\" alt=\"Michaels hazelnut bar back\" width=\"420\" height=\"199\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-hazelnut-bar-back-1.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-hazelnut-bar-back-1-320x152.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-hazelnut-bar-back-1-348x165.jpg 348w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Michaels-hazelnut-bar-back-1-200x95.jpg 200w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-17487\" class=\"wp-caption-text\">So much hazelnut!<\/figcaption><\/figure>\n<p>The Caramelized White Chocolate with Crunchy Hazelnuts looked tasty, a golden blond chocolate with lots of toasted hazelnut bits scattered over the back of the bar and going all the way through. It had a good snap for a white chocolate and smelled chocolatey too. It started savory, evoking a roast turkey and gravy sensation to me, which was weird. But then the crunchy bits of hazelnuts asserted themselves, thank goodness, and I got over the initial read.<\/p>\n<p>Michael\u2019s Chocolates\u2019 Hazelnut Crunch Bar\u00a0received Silver for Best Texture and an Honorable Mention for Best Chocolate Bar;\u00a0and rated 4 stars.<\/p>\n<p>Michael\u2019s Chocolates are <a href=\"https:\/\/michaelschocolates.com\" target=\"_blank\" rel=\"noopener noreferrer\">available online<\/a> and in some local shops in SFBA (check the website for locations). Plus they deliver for free in SFBA.<\/p>\n<h2>Cool chocolate<\/h2>\n<figure id=\"attachment_17489\" aria-describedby=\"caption-attachment-17489\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17489\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Good-Chocolate-Himalayan-Salt.jpg\" alt=\"Good Chocolate Himalayan Salt\" width=\"200\" height=\"315\" \/><figcaption id=\"caption-attachment-17489\" class=\"wp-caption-text\">Most chocolatey non-sugar bar<\/figcaption><\/figure>\n<p>The other SFBA entrant in this year\u2019s competition, <strong><a href=\"https:\/\/chocolatebythebay.com\/magazine\/local-chocolate\/the-good-chocolate\/\">The Good Chocolate<\/a>,<\/strong> makes bars that use sugar alternatives: Primarily erythritol, but also mesquite powder and stevia.<\/p>\n<p>I don\u2019t like these substitutions because they cause a cooling sensation as the chocolate melts on your mouth which is the exact opposite of the normal chocolate warm mouthfeel. I think it interferes with the chocolate taste and makes it fade quickly, so it\u2019s not a satisfying chocolate experience. Of their 3 entries, the only one I would recommend is the\u00a065% Dark Himalayan Salt. It\u2019s very salt forward and very cooling but it was the most chocolatey tasting of the batch.<\/p>\n<p>The Good Chocolate\u2019s\u00a065% Dark Himalayan Salt\u00a0received an Honorable Mention for Best Dark Chocolate Bar.<\/p>\n<p>The Good Chocolate is available <a href=\"https:\/\/www.thegoodchocolate.com\" target=\"_blank\" rel=\"noopener noreferrer\">online in their own store<\/a> and on Amazon. They are also available at some grocery stores in SFBA. Check their website for locations.<\/p>\n<figure id=\"attachment_17490\" aria-describedby=\"caption-attachment-17490\" style=\"width: 320px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17490\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Wildwood-bar.jpg\" alt=\"Wildwood bar\" width=\"320\" height=\"616\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Wildwood-bar.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Wildwood-bar-208x400.jpg 208w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Wildwood-bar-200x385.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-17490\" class=\"wp-caption-text\">Almost too pretty to eat<\/figcaption><\/figure>\n<h2>Pretty, good chocolate<\/h2>\n<p>New competitor, <strong><a href=\"https:\/\/wildwoodchocolate.com\" target=\"_blank\" rel=\"noopener noreferrer\">Wildwood Chocolate<\/a>,<\/strong> from Portland, OR, submitted a very pretty dark chocolate bar with an all-over embossed image of cacao flowers in a simple open sleeve package that displayed the entire face of the bar.<\/p>\n<p>The Cardamom and Honey Caramel with Sea Salt<span class=\"Apple-converted-space\">\u00a0was a layer of firm caramel in a thin coat of 70% dark chocolate with s<\/span>ea salt crystals scattered on the back. The chocolate had a nice dark color.<\/p>\n<p>The bar was well made with a good chocolate flavor.\u00a0The first taste was\u00a0salt, then chocolate, and finally the chewy honey caramel. The\u00a0cardamom was too subtle for me, more like a flavor enhancer than cardamom forward as the name implies. It appeared briefly at the end and disappeared fast. On the other hand, the salt\u00a0held all the way through but didn\u2019t linger.\u00a0Caramel was the strongest and longest lasting flavor.<\/p>\n<p>This was another instance where messy translated to good. The bar\u2019s beautiful mold didn\u2019t have handy demarcation lines for breaking, and the caramel layer got squishy and messy when breaking off pieces from the middle of the bar. The one I liked best was their darkest. The\u00a085% Dark Chocolate<span class=\"Apple-converted-space\">\u00a0bar used beans sourced from<\/span>\u00a0Papua New Guinea, and\u00a0even though it had a high cacao percentage, it had a soft snap due to being stone ground. While it was bitter, it wasn\u2019t bad. It was\u00a0savory, not fruity, with slight coffee and tobacco overtones, and felt a little drying at end.<\/p>\n<p>Seventeen Rocks\u2019 85% Dark Chocolate received a Gold for Best Dark Chocolate Bar, and\u00a0rated 3.5 stars.<\/p>\n<p>You can buy 17 Rocks Chocolate\u2019s complete line of stoneground chocolate online. Each approx. 4&#8243; x 9&#8243; package totals 4.4 oz. of chocolate. Opening the pack reveals 5 individually wrapped minibars, which are handy for snacking and sharing.<\/p>\n<p>Moser Roth submitted 3 bars, and I liked them all even though these are clearly not artisan chocolate. It had a good snap and a\u00a0mild chocolatey taste; I would\u2019ve sworn it was a milk chocolate if it didn\u2019t say otherwise on the package. It had a smooth mouthfeel with little grains of crunchy salt to perk it up. It received a Silver for Best Dark Chocolate Bar, and rated 4 stars.<\/p>\n<p>The\u00a0Milk Extra Creamy was not kidding. It had a soft break and an immediate milk flavor (as opposed to milk chocolate flavor). The\u00a0smooth and not too sweet milk chocolate\u00a0melted nicely, filling my mouth with its mild milk chocolate flavor. It received a Gold for Best Milk Chocolate Bar.<\/p>\n<p>The Toffee Crunch was another milk chocolate bar with a soft break. It had an immediate caramel toffee flavor, and was a satisfying experience with\u00a0small crunchy toffee bits in smooth chocolate. It received a Silver for Best Texture and Best Flavored Chocolate Bar, and an Honorable Mention for Best Milk Chocolate Bar, and rated 4 stars.<\/p>\n<p>These are very good comfort-food chocolate bars. A decent couverture, well made, in a variety of flavors, and nothing too strong or sharp. I was shocked because I have been in a couple of Aldi stores and didn\u2019t like the experience. They are kinda depressing looking, maybe a step above a dented-can grocery outlet, not a place I would expect to find decent chocolate. But if you shop at Aldi, I can recommend the house chocolate bars. I call them a mystery chocolatier because they have no online presence and not even an address on their labels. I have zero idea who they are or where they are, but I like some of their chocolate and would recommend it if I could.<\/p>\n<figure id=\"attachment_17499\" aria-describedby=\"caption-attachment-17499\" style=\"width: 320px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17499\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Petes-Coffee.jpg\" alt=\"Petes Coffee\" width=\"320\" height=\"316\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Petes-Coffee.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Petes-Coffee-200x198.jpg 200w\" sizes=\"auto, (max-width: 320px) 85vw, 320px\" \/><figcaption id=\"caption-attachment-17499\" class=\"wp-caption-text\">Pete\u2019s coffee bar shattered before I even opened the package<\/figcaption><\/figure>\n<p>This time they had a coffee-flavored dark chocolate that started earthy, became floral, and ended with a coffee candy flavor. It was very hard and shattered a bit when breaking off pieces to sample, so it was another messy bar in this competition.<\/p>\n<p>Their second entry, a cherry-flavored dark chocolate, smelled good but had a cherry-soda flavor due to its being flavored with cherry extract instead of dried cherries. It brought back childhood memories of Smith Brothers cough drops. It got better as the chocolate asserted itself over the cherry extract.<\/p>\n<p>Their third entry was an interesting 60% dark milk chocolate that used caramelized cane sugar and unrefined panela sugar for sweeteners. It\u00a0started bitter, but sweetened up as it melted and had a slightly smoky\/savory taste that was unexpected for a milk chocolate.<\/p>\n<p>Both the Los Tres Colombianos Coffee &amp; 68% Dark Chocolate and the Dark Chocolate Cherry received Bronze for\u00a0Best Dark Chocolate Bar and an Honorable Mention for\u00a0Best Flavored Chocolate Bar, and rated 3.5 stars.<\/p>\n<p>The Half Light Milk Chocolate\u00a0received Silver for Best Milk Chocolate Bar and rated 4 stars.<\/p>\n<h2>What were they going for?<\/h2>\n<p>Finally, I have to talk about the worst bar in the bunch and other unfortunate experiences. There are a couple of repeat competitors who I can only conclude don\u2019t really like chocolate. They tend to use unusual ingredients, which is not bad in itself, but I don\u2019t believe they actually try to make their combos work. It is to the point now that when I see their entries, I shudder in dread anticipation.<\/p>\n<p>I won\u2019t name them \u2014 you can figure it out if you want \u2014 but if I could give them some advice, I would say #1 spend the money for a decent couverture. If you start with inferior chocolate, it\u2019s not going to get any better with whatever you add.<\/p>\n<p>#2 After you invest in good couverture, don\u2019t add crap to it. And that includes palm oil, palm kernel oil, any partially hydrogenated fats, high fructose corn syrup, and artificial colors and flavors. Garbage in, garbage out doesn\u2019t only apply to data.<\/p>\n<p>#3 Taste your product before you put it out into the world. If you do not like chocolate enough to be your best taste tester, why are you even doing this?<\/p>\n<h2>Breakfast bar<\/h2>\n<p>This time around there was a handful of ghastly tasting bars, but I will only discuss one to give you an example of what I am talking about. The bar was a milk chocolate bar according to its ingredients list, but it looked like a dark chocolate. No percentage was listed.<\/p>\n<figure id=\"attachment_17500\" aria-describedby=\"caption-attachment-17500\" style=\"width: 420px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-17500\" src=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Calgary.jpg\" alt=\"Scary bar\" width=\"420\" height=\"307\" srcset=\"https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Calgary.jpg 420w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Calgary-320x234.jpg 320w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Calgary-348x254.jpg 348w, https:\/\/chocolatebythebay.com\/magazine\/wp-content\/uploads\/2020\/11\/Calgary-200x146.jpg 200w\" sizes=\"auto, (max-width: 420px) 85vw, 420px\" \/><figcaption id=\"caption-attachment-17500\" class=\"wp-caption-text\">I hesitated to unwrap this scary-looking bar<\/figcaption><\/figure>\n<p>It was liberally covered in dried fruit. But the fruit was so dried, it looked like it had been mistreated \u2014 dark, hard, and shrunken \u2014 it reminded me of Medieval art, which freaks me out so much I zoom through those galleries in a museum with my head down until I arrive at the safety of the Renaissance.<\/p>\n<p>I did not want to try this unappetizing chocolate, but I take judging seriously, so I took a piece that included parts of the desiccated looking dried fruits on top. To start, it was bad chocolate with a sugary, grainy texture. But worse than that it tasted like hard boiled eggs, then bitter grapefruit.<\/p>\n<p>\u201cHealthy\u201d chocolate is a significant trend in chocolate today (witness The Good Chocolate mentioned earlier), but decorating a subpar bar with superfoods that don\u2019t taste good in themselves is a mistake.
